Corey and I recently had afternoon tea with our neighbors, and these brandy snaps with cream were a big hit. Their shells reminded us of the crispy layer of crème brûlée. In fact, I’m playing with the idea of creating these again and using a crème brûlée filling.

This was my first experience decorating with fondant and it was a blast! These fresh cheery cupcakes with fondant icing may look intimidating, but they’re actually quite easy to make. Upon returning to Chicago some of our friends invited us over for afternoon tea. Beyond thrilled at discovering more people who enjoy having tea, I started to plan what to make. It dawned on me that as much as I love tea, I needed (ok, more like wanted) a cookbook purely dedicated to afternoon tea recipes.

I discovered The Perfect Afternoon Tea Recipe Book by Antony Wild and Carol Pastor. It’s a beautiful book with gorgeous photographs and detailed instructions. It’s interesting to note the differences between British and American cooking terminology, such as self-raising flour for self-rising flour, plain flour for all-purpose flour, bicarbonate of soda for baking soda, icing sugar for confectioners’ sugar, cornflour for cornstarch,  wholemeal flour for whole-wheat flour, sugarpaste for fondant, etc. Luckily enough, the book has both the English and American terms. read more

Lemon Curd

I’m typically not a lemon dessert fan; something about the lemony-tartness encroaching on the sweet flavors bothers me. Why intentionally ruin a good thing? But, in my culinary journeys I’m always willing to try new things, especially if they’re part of an authentic meal or cultural tradition. So, during my first afternoon tea, I dutifully tried lemon curd with my scones. Overwhelmed by all the sensual delights at the time, it didn’t strike a chord with me one way or the other. read more

Devonshire Cream

I first tasted Devonshire (or clotted) cream at The Drake Hotel. Similar to whipped cream, but not as sweet or light, it’s easily spreadable, and is often served during cream tea, which consists of an assortment of scones and jams and, of course, clotted cream. Preparation of authentic Devonshire cream requires a lot of time and effort, as it’s made with unpasteurized milk left at room temperature for several hours, then heated and cooled. This process produces a thick layer of cream at the top, which is skimmed off to yield clotted cream. read more
