Harissa

I’d never heard of harissa until researching how to make Moroccan olives, but it’s what gives them their fiery smokiness. Harissa is Tunisian chili paste made from a blend of dried red peppers and spices. It can be used to increase the heat in virtually any recipe. For an easy appetizer, I especially enjoy serving harissa on slices of baguette. Depending on which peppers you select, harissa can be anywhere from blazingly hot to mild and smoky. Leek Pie

Leek Pie, French leek pie, leeks

Food brings back memories in powerful ways. This past week I recreated the first dinner Corey and I shared in France for our honeymoon. Our good friend Marshall was teaching English in Noyon, France and we were lucky enough to get to visit him for part of our journey. He graciously prepared this dinner for us and it was an epicurean delight.

We started the meal off with a bottle of Sauternes—a wine made by a rare fungus growth on grapes, which results in a higher sugar content, producing a very sweet but complex tasting wine. We paired the wine with goat cheese, foie gras, Camembert cheese, Moroccan olives, and several fresh baguettes. read more

Glühwein

Glühwein, German mulled wine, German spiced wine

Glühwein (glow wine) is a German hot spiced wine, typically served during the winter months and is especially popular around Christmas time. Corey and I were first introduced to Glühwein this December when we went to the Christkindlmarket in downtown Chicago. The Chriskindlmarket offers a variety of tradional German fare, such as currywurst, sauerbraten, schnitzel, bavarian pretzels, sauerkraut, and variety of German beers.

The signature drink at the Christkindlmarket has to be the Glühwein, which is served in a cute boot-shaped mug. When we first entered the market almost everyone of drinking age, was holding a mug of Glühwein and I knew if I didn’t try anything else I would have to try the German mulled wine. Glühwein will warm the body and the citrus and spices add a pleasant touch to ordinary red wine. It is the perfect drink on a cold, winter night. read more
